基隆"鼎边锉"
许多人基隆,都想一尝鼎边锉的口味。
鼎边锉是福州小吃,是在福州人家里常可吃到的汤食,里面有肉羹、虾仁羹、金针菇、香菇、木耳、鱿鱼、小鱼干、竹笋、高丽菜,内容丰富,真是标准的汤好料多,然而这只是配料,主菜是白白嫩嫩的一片,称之为"鼎边锉"。
"锉"在台湾方言中为"爬滚"的意思,其制作是用米磨成米浆,沿着大锅鼎边滚下,米浆滑滚的动作叫"锉",所成白白一片,就是鼎边锉。
鼎边锉以邢家最有名。

台南传统黑碗粿

碗粿的内容不外是米浆、香菇、虾仁、蛋黄、肉,但台南的碗粿却多了一样─肉燥,使得台南的碗粿跟北部的白碗粿不一样,成了黑碗粿。
碗粿之所以好吃,就在于软又Q!一般碗粿表面上看到的通常是蛋黄、虾仁或香菇,加上一块块香喷喷的肉燥。碗粿要好吃,不是把料加一加就行了,做碗粿一定要用旧的在来米,否则一定不好吃;米浆跟水的比例要抓得很准,温度也要控制好,这样才能做出真正好吃的碗粿。
台语有句话:「阿婆炊粿,倒塌」,碗粿蒸出来之后中间会凹下去,好吃的碗粿中间凹下去的地方不会糊糊的。

蚵仔煎

蚵仔煎是一种著名的台湾小吃,用新鲜蚵仔(即牡蛎,又称「蚝」)、茼蒿菜、鸡蛋及芡水作成。
作法是先用平底锅把油烧热,放上蚵仔、搅拌后的鸡蛋、青菜后再淋上芡水,待蚵仔熟时盛起,淋上酱汁后即可食用,制作方便,味道鲜美,几乎每个台湾夜市都可以找到卖蚵仔煎的摊位。不过许多蚵仔煎的摊位会兼卖「花枝煎」、「虾仁煎」、「蛋煎」等,顾名思义,就是以花枝、虾子代替蚵仔
